Tastes like a cross between a potato and a pear&#8230; And it&#8217;s an excellent source of fiber and vitamin C!<\/p>\n<p>Why I love it: Jicama is super versatile and found at most grocery stores. Can be eaten raw as a snack, in salads, or cooked in stir fry. This jicama slaw has the fresh taste of summer with cilantro and a crisp mix of veggies.<\/p>\n<h2>Ingredients<\/h2>\n<p><strong>Yields: 6-8 servings<\/strong><\/p>\n<ul>\n<li>2 medium jicama (about the size of a potato), peeled and julienned<\/li>\n<li>1 cup red cabbage, julienned<\/li>\n<li>2-3 small radishes, peel ON and julienned<\/li>\n<li>1 large carrot, ribbon cut with a vegetable peeler<\/li>\n<li>1\/3 cup cilantro (more if you love it), chopped<\/li>\n<li>2 Tablespoons each avocado oil, rice vinegar, red wine vinegar<\/li>\n<li>Pinch of salt<\/li>\n<\/ul>\n<h2>Directions:<\/h2>\n<ol>\n<li>Combine all vegetables in a bowl.<\/li>\n<li>Mix in oil, vinegars, and salt.<\/li>\n<li>Set in fridge for 30 minutes to combine flavors.<\/li>\n<li>Serve as a side dish or top on your favorite grilled protein.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/www.bornfitness.com\/wp-content\/uploads\/2021\/05\/2-11.png\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-5825\" src=\"https:\/\/www.bornfitness.com\/wp-content\/uploads\/2021\/05\/2-11.png\" alt=\"jicama summer slaw\" width=\"581\" height=\"774\" srcset=\"https:\/\/www.bornfitness.com\/wp-content\/uploads\/2021\/05\/2-11.png 810w, https:\/\/www.bornfitness.com\/wp-content\/uploads\/2021\/05\/2-11-225x300.png 225w, https:\/\/www.bornfitness.com\/wp-content\/uploads\/2021\/05\/2-11-768x1024.png 768w, https:\/\/www.bornfitness.com\/wp-content\/uploads\/2021\/05\/2-11-700x933.png 700w\" sizes=\"auto, (max-width: 581px) 100vw, 581px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Jicama is super versatile and found at most grocery stores.
