It can be used as a side dish or a main feature.<\/p>\n<p>I like to serve it over leafy greens with grilled chicken (not vegan).<\/p>\n<p>It also stores well in the fridge for leftovers during the week!<\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>2 cups quinoa, measure cooked<\/li>\n<li>1 cup cucumbers, diced<\/li>\n<li>1 cup kalamata and green pitted olives, halved<\/li>\n<li>1 cup red bell pepper, diced<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>1 tablespoon red wine or apple cider vinegar<\/li>\n<li>Salt and pepper (optional)<\/li>\n<\/ul>\n<h2>Directions:<\/h2>\n<p>Combine all ingredients in a bowl. Mix and serve.
