{"id":5614,"date":"2021-03-12T18:12:17","date_gmt":"2021-03-13T01:12:17","guid":{"rendered":"https:\/\/www.bornfitness.com\/?p=5614"},"modified":"2021-03-12T18:16:10","modified_gmt":"2021-03-13T01:16:10","slug":"egg-frittata","status":"publish","type":"post","link":"https:\/\/www.bornfitness.com\/egg-frittata\/","title":{"rendered":"Egg Frittata"},"content":{"rendered":"<p><strong>Yields:\u00a0<\/strong>4-6 servings<\/p>\n<h2>Egg Frittata Ingredients<\/h2>\n<ul>\n<li>8 eggs, whisked<\/li>\n<li>2 cups broccoli florets, chopped<\/li>\n<li>2 cups shiitake mushrooms, chopped<\/li>\n<li>1\/2 cup red onion, diced<\/li>\n<li>1 cup corn<\/li>\n<li>1\/2 cup freshly grated Asiago cheese (any hard \u201cstinky\u201d cheese works great!)<\/li>\n<li>2 tablespoons butter<\/li>\n<li>Salt and pepper<\/li>\n<li>Fresh dill (optional)<\/li>\n<\/ul>\n<h2>Frittata Directions<\/h2>\n<p><em><strong>NOTE:<\/strong> <\/em>You will be cooking this on the stovetop in a skillet. I like to use something with a tall edge that can take the heat (All-Clad stainless steel 3qt saute\u2019 pan). The last minute will be under the broiler so it is important to use a saucepan that can go directly in the oven on high heat (no plastic or rubber handles)<\/p>\n<ol>\n<li>Turn the boiler on so it can preheat.<\/li>\n<li>Saut\u00e9 broccoli, mushrooms, onion in a pan until just tender. About 5-8 minutes on medium-low heat.<\/li>\n<li>Remove veggies from the pan and place in a large bowl.<\/li>\n<li>Add whisked eggs, corn, cheese, S+P to the veggie mix. Combine and set aside.<\/li>\n<li>Add butter to the empty pan. Bring heat to medium. Coat the pan well.<\/li>\n<li>When butter starts to sizzle add veggie and egg mixture back into the pan. Make sure the mixture is even in the pan.<\/li>\n<li>Cook on medium for 8 minutes or until the edges start to turn golden and pull away from the pan. The top will still look a little runny, but don\u2019t worry that is where the broiler comes in. <strong>DON\u2019T OVERCOOK IT!\u00a0<\/strong><\/li>\n<li>After frittata has cooked for approximately 8 minutes, move the pan to the hot broiler and cook the top for 1 minute.<\/li>\n<li>Using hot pads, remove the pan from the oven and cool for 3 minutes <em><strong>(CAUTION: the handle is going to be HOT!)<\/strong><\/em><\/li>\n<li>Top with fresh dill (optional) then cut into wedges and serve.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter
