They\u2019re easy to prepare and will please meat-eaters, vegetarians, and vegans alike.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Picture this: beef strips (or tofu!) smothered in a zesty chimichurri sauce, with bright sauteed peppers and onions, all wrapped in a fresh tortilla. Pair these with our <\/span><a href=\"https:\/\/www.bornfitness.com\/high-protein-healthier-nachos\/\"><span style=\"font-weight: 400;\">high-protein nachos<\/span><\/a><span style=\"font-weight: 400;\">, and you\u2019ve got a big game spread that\u2019s sure to be a touchdown (yes, pun intended).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The best part? Just set the fillings out and let your guests build their own taco. Party planning is done.\u00a0<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-5152 aligncenter\" src=\"https:\/\/www.bornfitness.com\/wp-content\/uploads\/2020\/01\/Picture1.png\" alt=\"Chimichurri Street Tacos\" width=\"431\" height=\"575\" srcset=\"https:\/\/www.bornfitness.com\/wp-content\/uploads\/2020\/01\/Picture1.png 431w, https:\/\/www.bornfitness.com\/wp-content\/uploads\/2020\/01\/Picture1-225x300.png 225w\" sizes=\"auto, (max-width: 431px) 100vw, 431px\" \/><\/p>\n<h1><b>The Taco Part:\u00a0<\/b><\/h1>\n<p><span style=\"font-weight: 400;\">Makes 8-12 tacos<\/span><\/p>\n<p><span style=\"font-weight: 400;\">You can prepare your beef on the grill then slice it or start with slices and bake it in the oven (shown in this recipe).\u00a0<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">1 lb top sirloin (or cut of your choice), cut into thin slices<\/span><\/li>\n<li><span style=\"font-weight: 400;\">4 oz extra firm Tofu, well-drained and diced<\/span><\/li>\n<li><span style=\"font-weight: 400;\">4 oz shiitake or portabella mushrooms, sliced<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 green bell pepper, cut into slices<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 medium red onion, cut into slices<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 cups raw red cabbage, shredded\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">12 small corn or flour \u201cstreet taco\u201d shells<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Plain non-fat Greek yogurt for topping (optional)<\/span><\/li>\n<\/ul>\n<h1><b>The Chimichurri Sauce:<\/b><\/h1>\n<p><span style=\"font-weight: 400;\">Makes 2-3 cups\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Traditional chimichurri sauces use more oil, however, I scaled back on the oil and replaced it with water. This recipe uses avocado oil in place of traditional olive oil, but olive oil is a fine option. The amount of sauce you get will depend on how much water you add.\u00a0<\/span><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">1 packed cup flat parsley<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 shallot, cut into large chunks<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc cup red wine vinegar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1-2 cloves garlic\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bd tsp dried oregano<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc tsp ground cumin<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc tsp salt<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc cup avocado oil<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Water\u00a0<\/span><\/li>\n<\/ul>\n<h2><b>How To Make Chimichurri Sauce:<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">In a food processor or blender, combine parsley, shallot, vinegar, garlic, oregano, cumin, and salt. Pulse until the ingredients are combined. Add avocado oil and pulse until coarsely pureed. While the food processor is running, slowly add a small amount of water. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Stop the blade and check the consistency. If you want it thinner, add more water and run the food processor for another 5-10 seconds.\u00a0 <\/span><\/p>\n<p><b><i>Note:<\/i><\/b><i><span style=\"font-weight: 400;\"> Don\u2019t over processes the sauce or it will be too liquidy. Add a little water at a time and run the blade in 5-10 second increments. The texture should be slightly coarse, not silky smooth.\u00a0<\/span><\/i><\/p>\n<h2><b>How To Make The Tacos:<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Place beef strips in a bowl. Top with \u00bc cup of chimichurri sauce and toss to coat the beef. Cover the bowl and refrigerate for 30 minutes or up to 24 hours.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a separate bowl, add tofu and \u00bc cup of chimichurri sauce. Gently toss and coat the tofu. Cover the bowl and refrigerate for 30 minutes or up to 24 hours. Reserve the remaining chimichurri for a topping.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Preheat the oven to 375 degrees. Cover a baking sheet with foil or parchment paper. Remove the sirloin and tofu from the marinade. Discard used chimichurri. Place the tofu on one side of the baking sheet and the beef on the other side (or use two separate baking sheets).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Bake until the beef is cooked through. Approximately 10-15 minutes. (Longer if you like your beef well done).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">While the tofu and beef are baking, saute the mushrooms, bell pepper, and onion in a pan on medium heat until slightly tender. <\/span><b><i>Note: <\/i><\/b><i><span style=\"font-weight: 400;\">To reduce calories use water instead of oil to saute your vegetables.\u00a0<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">Once your beef, tofu, and vegetables are cooked it is time to assemble your tacos. On a taco shell, layer up your vegetables, protein of choice, fresh red cabbage, additional chimichurri sauce, and yogurt.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Enjoy!<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>It doesn\u2019t get better (or easier) than these Chimichurri Street Tacos.
